Sol Agave serves up best enchilada in town

Freshly prepared Mexican food with presentation to match

Normally I have pretty firm guidelines about only reviewing and spotlighting locally owned restaurants, but I am so over-the-moon for Sol Agave that I couldn’t pass up the opportunity to introduce Utah Valley Magazine readers to this amazing restaurant. 

   Sol Agave has four locations in California, and they decided to venture out of state to the burgeoning food scene in Utah Valley! They opened up their first Utah location in American Fork with a second location already in the works for Riverton. 

   The atmosphere is chic and welcoming. The host and every single member of their team is outstanding. We had at least four servers stop by our table to make sure all our needs were perfectly met. 

   I wanted to sample so many of the scrumptious looking menu options that I ordered more food than our table could possibly eat. The Sol Agave team graciously packaged all of our food to go. 

   This food is so good and well prepared that it was even delicious the next day as leftovers. Often in Mexican restaurants so many of the items are deep-fried and do not reheat well, but not here! The presentation of each plate was beautiful, with freshly prepared top quality food. 

   I loved the complimentary “chips and salsa” platter brought to start the meal. So many Mexican restaurants are now charging for the traditional meal starter, but not these guys. Not only is it complimentary, but the homemade fresh salsa was out of this world. It also comes with the most scrumptious bean dip — and I don’t even like bean dip! LOL.   

   They do have a full bar but can make many of their drinks non-alcoholic. We started off with two appetizers: the Taco Sampler Plate and The Pork Belly with pickled red onions, honey chili glaze, and homemade corn tortillas. It was all fantastic, but the pork taco was over the top! I could have stopped right there and been very happy.

   Next came the Pesce Tacos and the absolute best enchilada I’ve ever had. These beef enchiladas were made with the most tender filet mignon and served with jumbo grilled prawns and the best non-traditional sauce. Oh, be still my heart. I can’t even begin to tell you how good these were! 

   Many people told me about the Butter Cake before I arrived, so I knew it had to be ordered. We were already stuffed to the brim, so I asked for the cake to be brought with a to-go box. There was no way I was going to even have a bite.

   Bahahaha!

   We ate the whole thing before we left. Who could resist the buttery sugar crust, house-made ice cream and tender melt-in-your-mouth cake? I’m gonna to stop by Sol Agave just for dessert. Truly inspired cuisine.

   Sol Agave gets five stars from me, and I hope you give them a try soon.
